- 1 1/2 pounds sirloin steak, cut into 1-inch cubes (can also use top round, flank steak, or stew meat)
- 1 pound Yukon Gold potatoes, diced into 1/2-inch cubes (also lists 4 large Russets)
- 1 1/2 cups sliced onions
- 1 can (14-15 ounces) diced tomatoes, undrained
- 1 tablespoon vegetable oil (for browning – optional)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons all-purpose flour (for thickening – optional)
- 1 teaspoon sugar
- 1 Teaspoon Garlic Powder
- (Optional) Paprika
- 1 1/2 to 2 Cups Beef Broth
- 1 Tablespoon Worcestershire Sauce
- (For Serving – Optional): Shredded cheddar cheese, chopped green onions, sour cream.
Instructions
- Section 1: Preparing the Ingredients
- Cut the steak into 1-inch cubes.
- Dice the potatoes into 1/2-inch cubes.
- Slice the onions.
- Section 2: Browning the Steak (Optional, but recommended)
- Heat the vegetable oil in a large skillet over medium-high heat.
- Brown the steak cubes on all sides (this adds flavor, but is not strictly necessary for slow cooking).
- Section 3: Layering in the Crockpot
- Place the cubed steak in the bottom of the slow cooker.
- Layer the diced potatoes and sliced onions over the steak.
- Add the can of diced tomatoes (undrained).
- Section 4: Adding Seasonings and Liquid
- In a separate bowl, whisk together the beef broth, and Worcestershire sauce, salt, pepper, garlic powder, sugar, and any other desired seasonings (like paprika).
- Pour the mixture evenly over the steak, potatoes, and onions in the slow cooker.
- Section 5: Slow Cooking
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the steak is tender and the potatoes are cooked through.

- If desired, thicken the sauce during the last 20-30 minutes of cooking. Mix 3 Tablespoon of flour OR 1 tablespoon of cornstarch with 2 tablespoons of cold water to form a slurry. Stir the slurry into the slow cooker.
