Ingredients

Scale
  • 1 1/2 pounds sirloin steak, cut into 1-inch cubes (can also use top round, flank steak, or stew meat)
  • 1 pound Yukon Gold potatoes, diced into 1/2-inch cubes (also lists 4 large Russets)
  • 1 1/2 cups sliced onions
  • 1 can (14-15 ounces) diced tomatoes, undrained
  • 1 tablespoon vegetable oil (for browning – optional)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons all-purpose flour (for thickening – optional)
  • 1 teaspoon sugar
  • 1 Teaspoon Garlic Powder
  • (Optional) Paprika
  • 1 1/2 to 2 Cups Beef Broth
  • 1 Tablespoon Worcestershire Sauce
  • (For Serving – Optional): Shredded cheddar cheese, chopped green onions, sour cream.

Instructions

  • Section 1: Preparing the Ingredients
  • Cut the steak into 1-inch cubes.
  • Dice the potatoes into 1/2-inch cubes.
  • Slice the onions.
  • Section 2: Browning the Steak (Optional, but recommended)
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Brown the steak cubes on all sides (this adds flavor, but is not strictly necessary for slow cooking).
  • Section 3: Layering in the Crockpot
  • Place the cubed steak in the bottom of the slow cooker.
  • Layer the diced potatoes and sliced onions over the steak.
  • Add the can of diced tomatoes (undrained).
  • Section 4: Adding Seasonings and Liquid
  • In a separate bowl, whisk together the beef broth, and Worcestershire sauce, salt, pepper, garlic powder, sugar, and any other desired seasonings (like paprika).
  • Pour the mixture evenly over the steak, potatoes, and onions in the slow cooker.
  • Section 5: Slow Cooking
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the steak is tender and the potatoes are cooked through.
  • Section 6: Thickening the Sauce (Optional)
  • If desired, thicken the sauce during the last 20-30 minutes of cooking. Mix 3 Tablespoon of flour OR 1 tablespoon of cornstarch with 2 tablespoons of cold water to form a slurry. Stir the slurry into the slow cooker.
  • Section 7: Add Cheese (Optional)
  • Add Shredded Cheddar cheese in the last 10-15 minutes.
  • Section 8: Serving
  • 1. Serve hot.
  • 2. (Optional) Garnish with shredded cheddar cheese, chopped green onions, and/or sour cream.
