  • 1 cup creamy peanut butter
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • For the chocolate ganache:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream
  • 1 tablespoon unsalted butter
  • For the Topping:
  • * 8-10 Reese’s Peanut Butter Cups, chopped
  • * 1/4 cup peanut butter, melted for drizzling
  • * 1/4 cup chocolate sauce for drizzling

Instructions

  • Section 1: Prepare the Chocolate Cookie Crust
  • Preheat oven to 350°F (175°C).
  • Process cookies into crumbs.
  • Combine crumbs, melted butter, sugar, and salt.
  • Press mixture into a 9-inch pie plate.
  • Bake for 8-10 minutes and cool completely.
  • Section 2: Create the Peanut Butter Filling
  • Beat cream cheese and peanut butter until smooth.
  • Add powdered sugar and vanilla extract. Beat until fluffy.
  • Whip heavy cream to stiff peaks.
  • Gently fold whipped cream into peanut butter mixture.
  • Spoon filling into cooled crust.
  • Refrigerate while preparing ganache.
  • Section 3: Prepare the Chocolate Ganache
  • Place chocolate chips in a heatproof bowl.
  • Heat cream until just simmering.
  • Pour hot cream over chocolate. Let stand for 2 minutes.
  • Add butter and whisk until smooth.
  • Cool slightly until thickened but pourable.
  • Section 4: Assemble and Decorate the Pie
  • Pour ganache over peanut butter filling.
  • Refrigerate for 15 minutes to set slightly.
  • Arrange chopped Reese’s Peanut Butter Cups around the edge.
  • Drizzle with melted peanut butter and chocolate sauce.
  • Refrigerate for at least 4 hours, or preferably overnight.
