- 2 tablespoons tomato paste
- 1/4 cup beef broth
- For the cheese component:
- 2 cups shredded cheese blend (cheddar, mozzarella, monterey jack)
- 1/4 cup freshly grated Parmesan cheese
- For Garnish
- 3 tablespoons fresh chives or green onions
- 1/2 cup sour cream
- 2 tablespoons fresh parsley
Instructions
- Section 1: Prepare the Potato Mixture
- Grate potatoes. Squeeze out moisture using a kitchen towel (twice for best results). Transfer to a bowl.
- Add grated onion, beaten eggs, flour, salt, and pepper. Mix thoroughly. Let rest for 10 minutes.

- Brown ground beef in a skillet over medium-high heat.
- Add diced onion; cook until translucent.
- Add minced garlic; cook until fragrant.
- Stir in oregano, paprika, cumin, salt, and pepper.
- Add tomato paste; mix well.

- Section 3: Form and Cook the Potato Pancakes
- Heat oil in a skillet over medium heat.
- Scoop 1/4 cup potato mixture for each pancake; flatten gently.
