Ingredients
(For the Hamburger Steaks):
1 1/2 pounds ground chuck (80/20 or 85/15 lean-to-fat ratio) (Adjusted for 6 patties)
(Optional) Frozen unsalted butter, grated
Worcestershire sauce
(Optional) Cajun seasoning
Salt and black pepper (to taste)
Crushed Crackers OR Breadcrumbs.
(Optional seasonings): Garlic powder, onion powder, dried herbs (thyme, rosemary).
(For the Onion Gravy):
1 medium yellow onion, thinly sliced
3 tablespoons unsalted butter
2 cups beef broth
2 tablespoons cornstarch
1/2 Cup Chicken Broth
(Optional) Cold butter
Salt and pepper (to taste)
Instructions
Section 1: Preparing the Hamburger Steaks
(Optional) Grate frozen butter and keep it in the freezer until ready to use.
In a large bowl, gently combine the ground beef, Worcestershire sauce, Cajun seasoning (if using), salt, pepper, and any other desired seasonings. If using the frozen butter, gently mix it in. Do not overwork the meat.
Divide the mixture into 6 equal portions and shape them into oval patties, about 3/4-inch thick.
(Optional) Chill the patties in the refrigerator for 15 minutes to help them hold their shape.
Section 2: Cooking the Hamburger Steaks
Heat a large skillet (cast iron is ideal) over medium-high heat.
Add a little oil to the skillet (if needed – the ground beef may release enough fat).
Cook the patties for 3-4 minutes per side, or until they reach an internal temperature of 160°F (71°C).
Remove the patties from the skillet and set aside.
Section 3: Caramelizing the Onions
In the same skillet, melt the 3 tablespoons of butter over medium-low heat.
Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized and golden brown, about 15-20 minutes.
Section 4: Making the Onion Gravy
Add the beef broth to the skillet with the caramelized onions. Bring to a simmer.
In a small bowl, whisk together the cornstarch with 2 tablespoons of cold water to form a slurry.
Gradually whisk the cornstarch slurry into the simmering broth until the gravy thickens to your desired consistency.
Season the gravy with salt and pepper to taste.
(Optional) Stir in a small piece of cold butter at the end for a richer, smoother gravy.
Section 5: Combining and Serving
Return the hamburger steaks to the skillet with the onion gravy.
Simmer for a few minutes to heat the steaks through and coat them with the gravy.
Serve the hamburger steaks hot, topped with the onion gravy.
